Latin America has some of the best food in the world, but a lot of it tends to be unhealthy. Roberto Pérez noticed this and teamed up with Angel Fuentes to form Urban Pilon. Roberto joins us to explain how this project is a "culinary movement to share knowledge with the masses about the great foods of Puerto Rico, the Caribbean and Latin America." A core part of his work focuses on producing healthy alternatives and they showcase it in different ways like live cooking demonstrations, hosting classes, and an online blog. We also talk about the origin of Mofongo, Funche, and how pork was introduced into the caribbean diet. This is a fun one. Enjoy familia!
